Ice Box Pie

1 baked premade pie crust
3 oz cream cheese, softened
2 pints fresh strawberries
¾ cup sugar
2 tbsp cornstarch
1/3 cup Redwood Creek Malbec
½ pint whipping cream

Spread cream cheese over bottom of pie crust. De-stem, wash and drain strawberries. Reserve 8 whole berries for topping. Sprinkle half of the remaining berries over cream cheese.

In a 2 qt saucepan, combine sugar, cornstarch and wine. Add remaining berries, except those reserved for topping. Over medium heat, bring to a simmer and cook until mixture thickens. Cool thoroughly and pour over strawberries in pie crust. Top with whipped cream and garnish with remaining 8 whole strawberries. Chill thoroughly before serving.
